Blackberry Forest Cake Recipe
Cake Ingredients:
- 1 and 1/2 cups all-purpose flour
- 1 cup granulated sugar
- 3/4 cup unsweetened cocoa powder
- 1 and 1/2 teaspoons baking powder
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1/2 cup vegetable oil
- 2 large eggs
- 2 teaspoons vanilla extract
- 1 cup buttermilk
Blackberry Filling ingredients:
- 2 cups fresh blackberries
- 1/4 cup granulated sugar
- 1 tablespoon cornstarch
- 1 tablespoon water
Ingredients for the Whipped Cream Frosting:
- 2 cups heavy cream
- 1/4 cup granulated sugar
- 2 teaspoons vanilla extract
For Decoration:
- Fresh blackberries
- Chocolate shavings
Instructions:
- Start by making the cake batter. Combine the dry ingredients in a bowl, including flour, sugar, cocoa powder, baking powder, baking soda, and salt. Then add in the wet ingredients, including vegetable oil, eggs, vanilla extract, and buttermilk, and mix until just combined.
- Pour the cake batter into two 8-inch round cake pans that have been greased and floured, and bake in a preheated 350°F oven for 25-30 minutes, or until a toothpick inserted into the center of the cake comes out clean.
- While the cakes are baking, make the blackberry filling. Combine fresh blackberries, sugar, cornstarch, and water in a medium saucepan and cook over medium heat until the mixture comes to a boil. Then reduce the heat and let it simmer until it thickens.
